Clarksburg, California

Dancing Coyote is a family run, owned and operated vineyard located in a beautiful stretch of land in California’s Clarksburg appellation. The family has been farming in the Delta region along the Sacramento River for five generations. These days they keep busy nurturing over 600 acres of exquisite wine grapes in the ideal climate and soil of the Sacramento Valley. Their family’s devotion to producing wines of exceptional quality and character is unwavering. So, it’s no surprise they are involved in the winemaking process every step of the way. From the growing and harvesting of our grapes at the peak of their flavor, to crushing, aging and handcrafting the final product. In short, winemaking is the family’s greatest passion, so it goes without saying that they are in it for the long haul. Shelftalkers  Winery Website

Grapes were hand picked in the morning and gently pressed. Juice was cold settled and fermented cold in stainless steel tanks. The wine was allowed to sit on light lees for several months before racking. The wine was then finished for bottling, never seeing any oak or malo-lactic. A well-balanced, dry white wine with intriguing scents of green apple, pear and honeydew melon. This lighter-bodied wine has a bright crisp, mineral finish.

Grapes were hand picked in the morning and gently pressed. Juice was cold settled and fermented cold in stainless steel tanks. The wine was aged on light lees and kept cold for five months. The wine was then finished for bottling, never seeing any oak or malo-lactic. On the nose, we've captured the intense aromas of passion fruit, ripe citrus, honey and peaches. In the mouth it is well balanced with a fresh acidity that makes Albariño such a versatile food wine.

Grapes were hand picked at two different ripeness levels to preserve the natural acidity, and capture some of the riper fruit notes. The two lots were whole cluster pressed, and then cold settled to remove solids. Both lots were kept separate, and fermented cold in stainless steel barrels and aged on light lees for a couple months. The lots were blended according to taste, and chilled for stabilization before bottling. The name may be intimidating, but the wine is not. This popular Austrian grape produces a medium-bodied style wine with subtle citrus and white peach flavors, a touch of white pepper and a crisp, mineral finish.

Luscious and aromatic, this sweet wine is beautifully balanced with wonderful aromas of orange blossoms and a hint of honeyed peaches. Pairs wonderfully with roasted stone fruit (peaches, plums and pears) desserts, as well as honeyed figs. Also, delicious with fresh water fish, shellfish and most appetizers.
